Recipe: Broer House Salad

I try to serve a salad three-four times a week with dinner. That gives my family greens and fiber. This salad is very versatile and you can use your favorite vegetables in place of or with the ones I use.
This salad can be used as your main meal just by adding protein, cut up boiled eggs, sliced chicken breast or sliced turkey. Be creative and enjoy.
BROER HOUSE SALAD
- 10 to 12 oz bag mixed greens
- 2 heads Romaine Hearts chopped
- 1 med tomato cut in 1/2 inch square pieces
- ¼ cup green pitted olives
- 1/2 cup favorite cheese (Swiss, Smoked Gouda, etc...) cut into thin slices
- ½ cup red onion thinly sliced
- 2 tbs grated Romano cheese
Toss together everything except the Romano cheese in large salad bowl.
Dressing:
- ½ cup extra-virgin olive oil
- 2 tbs white wine vinegar
- 4 cloves garlic minced
- 2 tsp lemon juice
- 1 tsp Worcestershire sauce
- ¼ tsp plus a pinch salt
- 1 tsp dried oregano
- 1/8 tsp Health Masters Stevia
- Dash of pepper
Mix all ingredients in a jar with a lid. Shake until smooth. Salt and pepper to taste if needed. Add dressing to salad and toss well. Add grated cheese and toss one more time.
