Recipe: Broer House Salad

I try to serve a salad three-four times a week with dinner. That gives my family greens and fiber. This salad is very versatile and you can use your favorite vegetables in place of or with the ones I use.

This salad can be used as your main meal just by adding protein, cut up boiled eggs, sliced chicken breast or sliced turkey. Be creative and enjoy.

BROER HOUSE SALAD

  • 10 to 12 oz bag mixed greens
  • 2 heads Romaine Hearts chopped
  • 1 med tomato cut in 1/2 inch square pieces
  • ¼ cup green pitted olives
  • 1/2 cup favorite cheese (Swiss, Smoked Gouda, etc...) cut into thin slices
  • ½ cup red onion thinly sliced
  • 2 tbs grated Romano cheese

Toss together everything except the Romano cheese in large salad bowl.

Dressing:

  • ½ cup extra-virgin olive oil
  • 2 tbs white wine vinegar
  • 4 cloves garlic minced
  • 2 tsp lemon juice
  • 1 tsp Worcestershire sauce
  • ¼ tsp plus a pinch salt
  • 1 tsp dried oregano
  • 1/8 tsp Health Masters Stevia
  • Dash of pepper

Mix all ingredients in a jar with a lid. Shake until smooth. Salt and pepper to taste if needed. Add dressing to salad and toss well. Add grated cheese and toss one more time.
