Recipe: Salmon Stroganoff

When I was younger my Mother used to make beef stroganoff. If you like wild Salmon and sundried tomatoes, you’ll love this. Enjoy.

SALMON STROGANOFF

  • 4-6 oz. Wild Salmon fillets
  • 2 Tbs olive oil
  • 2 cloves minced garlic
  • 1 large onion chopped
  • 1 1-1/2 oz low fat sour cream
  • 1 8.5 oz jar sundried tomatoes in olive oil
  • ½ tsp salt
  • 1/8 tsp pepper
  • 1 12 oz bag large egg noodles

In a large skillet, cook Salmon in 1 tbs of olive oil about 5-10 minutes on each side or until center of salmon is fully cooked. Remove skin from salmon and discard. Place Salmon on plate and set aside. Place 1 tbs oil and onions in skillet and sauté until the onions are tender.

Break fillets into 1/8 pieces and add to onions. Drain sundried tomatoes and chop into ½ inch strips. Add to salmon and onions. Add salt and pepper. Cook on medium for 20 minutes. Stir in sour cream and cook 2 minutes. Serve with salad. Serves 10
